At the August 4th market, Amy Rindskopf prepared a lovely raw succotash salad using ingredients she purchased at the market.
- 4 ears of corn, kernels sliced off
- 1 pt sun gold cherry tomatoes, quartered
- 2 medium tomatoes, minced
- 1 pound green beans, sliced thin
- 1/2 shallot, minced
- 2 Tbsp Thai Basil, minced
- 2 Tbsp parsley, minced
- 1 tsp salt
- 1-2 Tbsp apple cider vinegar
Mix all ingredients together and season to taste.
