Ingredients
- 4-5 small eggplants, diced
- 1 med. onion, chopped
- 3 bell peppers, chopped
- 3-4 cloves garlic, minced
- 2 tsp. Baharet seasoning (from Soluna Garden)
- 2 tsp. Greek Seasoning (from Soluna Garden)
- 2 tsp Mediterranean Seasoning (from Soluna Garden)
- 1 1/2 cups tomato sauce
- salt and pepper
preparation
- Sautee the onions and garlic until translucent
- Add the eggplant and peppers and sautee for a minute
- Add the spices and stir in
- Add the tomato sauce and mix
- Add salt and pepper to taste
