- 1/4 cup cold-pressed olive oil
- 2 tablespoons apple cider vinegar
- Grated zest of 1 organic lemon
- 1 teaspoon Dijon mustard
- garlic scape – finely chopped
- 1 tablespoon poppy seeds
- 1 teaspoon raw honey or pure maple syrup
- 2 spring turnips, grated
- 1 baby daikon radishes, grated
- 1 bunch cilantro
- fresh peas
- 3 tablespoons minced fresh chives
- Whisk together all the dressing ingredients in a small bowl.
- Combine salad ingredients and mix together.
- Pour the dressing on the salad, mix and serve immediately
