Based on a recipe from Kripalu Cookbook

ingredients
- 1/2 c. diced sweet potatoes
- 4 c. water (divided)
- 1/2 c. chopped dried dates
- 1/2 c. chopped almonds
- 1/2 c. raisins
- 2 c. grated carrots
- 1 c. scrubbed grated fresh beets
- 1 c. diced apples
- 1/2 c. shredded coconut
- 1/4 c. fresh lemon juice
- 1/2 t. salt
preparation
- In a steamer, steam the sweet potatoes in 2 c. water until soft
- In a small bowl, combine the dates, almonds, raisins and remaining water and soak for 10-15 minutes.
- In a medium-sized bowl, combine the reserved potatoes, raisin mixture, and remaining ingredients and gently mix together. Serve
